Today we had to head to Staffordshire, many meetings, admin work, not much time for lunch. Being unusually under prepared, I grappled some chilli crackers, 2 avocados and a lemon, chucked them in my favourite scratched up, well used glass dish and headed out the door.
Normally when I make Guacamole, I add onions, hot red chilli, coriander, salt, lime the whole works. But when needs must, I had to trust that a lemon and avocado would do. The process was easier than pie, just mash with a fork squeeze the juice out of the lemon and serve with chilli crackers.
I’m not one for blowing my own trumpet, but it was delicious. Tangy, sweet, tasty and incredibly healthy. This certainly was fast, fast food.
Also, I have never had a guacamole turn out so green. Amazing colour!!!!!
