A delicious cheesecake

I found recently, in the good food magazine, a great recipe for a frozen cheesecake. I have to admit, seeing the cheesecake on the front page, made me perform an emergency stop with my shopping trolly in Tesco, almost causing a major pile up!!

I have to admit, I don’t normally follow recipes. When I buy Good Food Magazine, I get great inspiration, but always end up changing the recipe, trying out a variation, and the end result never looks like it should.

This dessert looked stunning. And seemed so easy to make. Basically cream cheese, raspberries, white chocolate, ice cream on a biscuit base, frozen. Delicious.

It was so easy to make, the cream cheese, sharpness of the raspberries and sweetness of the white chocolate complimented each other perfectly. It was a little time consuming, but the end result looked amazing.

It is certainly a show stopper at the end of a meal. My old suggestion would be to leave it out of the freezer for a good 15 minutes before serving. The recipe suggests any leftovers can be placed back in the freezer and kept for up to 3 months, but I think you will find it hard to find any leftover!!!
