Slow cooker Pork

I love my slow cooker but we have had our fair share of disasters together. Mainly dried out chicken or meat that’s so soggy you could wrong it out! But it’s never stopped me trying.

This is a deliciously spicy dish that’s slimming world friendly. If you are not following slimming world it’s less fiddly taking all the fat off the meat!

You’ll need

400g shallots, 1 large carrot, 1 green pepper (I don’t particularly like green peppers but slow cooked they are ok), 5 cloves of garlic (try and get smoked garlic but normal garlic is good too), 500g passata, 1/2 litre of chicken stock, 2 teaspoons paprika, 1 teaspoon of mustard powder, 1 teaspoon crushed red chillis and 8 pork steaks.

Start by preheating your slow cooker on low then chop up the vegetables. Then cut the pork into chunks (taking off the fat if you are slimming worlding it!

Add the pork to the cooker first top with the vegetables, pour over the passata and chicken stock then add your spices.

Set timer for 8 hours and wait for the deliciousness…. simple spicy and easy!

I’ll serve this with rice and a side of Fage Greek 0 yoghurt.
