Ok, so you can easily make this a vegetarian dish by substituting chicken with sweet potato, but it doesn’t have quite the same ring to it. Thai Green Sweet Potato Noodles….. hmmmm….. actually it does, but let’s just ignore that for now and get back to this recipe.
You’ll need to chop some Onions and gently fry them. Add some diced Yellow Pepper, some Spring Onions and a generous pinch of Salt. Stick on a low heat and let them gently cook down. Dice up some Chicken Breast or you can buy some ready diced chicken if you are feeling super lazy. Add the chicken to the pan, then stir in some Green Curry Paste and let this cook for about 3 minutes before pouring on 1liter of Chicken or Vegetable Stock & 1 can of Coconut milk. If you are feeling really decadent you could add two packets of coconut cream.
Its going to look too soupy now, and you may think you have messed it up. Fear not, just bring this to the boil and as soon as it bubbles away, reduce the heat to a simmer and cook for about 15 minutes. Now add a tin of sweetcorn and then your dried noodles. I use the ones that cook in 4 minutes. Chuck them in and break them up a bit and give it all a great big stir. Pop a lid on and leave it simmering for about 6 minutes.
You WILL need to stir this at least twice through the cooking time as the noodles WILL stick to the bottom of your pan. Use a pan that cleans up easily or you wont be doing this recipe again for a long time.
Once cooked, add a very generous handful or two of Spinach. Stir the leaves through and let them wilt a bit. Serve Immediately,
If you are cooking for a crowd, you can serve this with prawn crackers, rice and a side of steamed broccoli or mange tout. If its a quick simple dinner, you can just have this on its own.
If you are following Slimming World, this is a great filling recipe. I use about 4 onions, 1 pepper, 2 packets of diced chicken, 1 tin of reduced fat coconut milk, and the rest I just judge. For my recipe, the syns come from the coconut milk and curry paste. This dish serves about 8 potions and comes up at 2.5 syns per portion. 2 bowls will really fill you up especially if you are filling up on mange tout and other free side veggies.
