Breakfast. When I have time, I love it. I know, it is the most important meal of the day, and we should all make time for it, but life is busy and can be hectic. Sometimes, coffee is the only option. (Those who know me, know that coffee is ALWAYS the option).
This morning, there was time, time to try out a recipe that I have seen floating about on the internet for a while, involving eggs, bread, butter, oil and a frying pan. What more do you need for a great breakfast?
So we start bu making holes in our bread slices. I have small slices of enriched Van der Kamp bread, so needed a small glass to make a hole in the centre. You can use any bread, make the hole any size.
In a large frying pan, melt a generous amount of butter with a drizzle of olive oil. Wait till the butter is melted and foaming slightly then place your bread in the pan. Using the glass, break an egg into the glass to then pour into the hole in your bread. If you are feeling adventurous you could try cracking the egg into the hole. I wimped out this morning and used my glass.
Once the bottom of the egg sets, you need to flip the bread over, let it fry on the other side for a minute or two, this will cook any egg white that has leaked onto the bread, and cook the egg through, but will still leave a nice semi runny yolk. Serve and eat.
