I can’t quite believe it’s November 8th and I’m still making salad sides ….. normally by this time of the year we are well into our hearty stews, curries and comfort food which helps us get through winter.

Tonight we are having steak and Jacket Potatoes so I’m also serving up this simple side of tomatoes, yellow pepper and cucumber.

Over the whole salad I’ve sprinkled some tarragon. I love how this smoky almost tea like herb settles on the tastebuds with the tomatoes.

I’ve also drizzled over some aged balsamic glaze over the tomatoes just because we can 😂
