Decadent Cauliflower Cheese
Tonight we are having a slow slow slow roast lamb leg with lots of lovely vegetables. One of the side dishes is going to be my Decadent Cauliflower Cheese which is rich, creamy and delicious.
First take one large or two small Cauliflowers and separate into florets
Place in a pan of cold water and on a medium heat cook for 10 minutes; meanwhile,
In a pan, melt one dessert spoon of Butter
Then cook off one heaped dessert spoon of Plain Flour
Cook for 1 minute to cook out the flour taste, then add a Splash of Milk
Keep whisking, it will go thick and lumpy looking but don’t panic!
Add slowly, while still whisking, 1 Pint of Double Cream
Heat over a low heat while the sauce thickens then
Grate some strong Cheddar cheese
I don’t use a quantity for the cheese, go by taste, if you like it cheesy add more. Melt the cheese not the sauce over a low heat then pour over the cauliflower in a deep sided dish.
Place in the oven at gas mark 6 for 30 minutes until brown on top. Delicious. You can prepare the dish in advance, leave to cool, and place in the oven either later in the day or the next day.
Our slow roast lamb is in the oven and will be cooking for the next 7 hours. A blog update with the recipe will come later tonight.
