Sausages….. Square Ones!

As some of you know I am a real foodie. I love food. Nearly all food, sadly I can no longer eat shell fish but everything else can be chopped, cooked, made with love and I’ll eat it! With that in mind and a total lack of self control I find myself back on the slimming world plan. This time with a much healthier attitude to it. But the one thing I really miss is a decent sausage.

All, and I mean all of the “slimming” substitutes taste like cardboard or vomit. In some cases, cardboard vomit! So today I decided to make my own.

I always loved Square Sausage. Not sure why after all meat is meat be it long and cylindrical or fat and square. My aim was to make a descent tasting square sausage patty which was 0 syns.

Easy porking easy!!

So to make these sausages you need

500g 5% fat pork mince, a large onion, balsamic vinegar, dried sage, paprika (if you want it spicy) 1 egg, salt and pepper and fry light or a spray oil.

Chop the onion and cook on a low heat in fry light for 15 minutes. Stir once or twice during cooking.

Then add about 3 teaspoons of sage and cook for 5 minutes. Stir in a teaspoon of paprika and about 1 tablespoon of balsamic. Leave cooking without stirring on a low heat for another 5 minutes. They will look a bit like this

A bit dry looking. But it’s all good. Cool these down ( speed up the process by placing them in a dish and filling a sink with cold water )

Once Cooled, beat an egg, add the onions, add the pork mince, add another spoon of sage and a pinch of salt and pepper.

Mix until totally combined and return to the fridge for 10 minutes.

Now get your hands dirty by shaping into squares. I made medium ones and got 9 squares.

Fry in fry light until cooked through (about 15 minutes) and eat.

The above looks a bit sad as it’s just 2 tester sausages but imagine this with bacon and beans!!!!!
