Beetroot

For as long as I can remember I have hated beetroot. Actually not hated but detested! Whether it was fresh, boiled, pickled, in a salad or whatever. I DON’T LIKE IT!

But after hearing constantly about all the benefits of beetroot, how good it is for you I thought there must be a way I can eat it.

So I decided to keep it simple.

I pick up a pack of cooked beetroot and grimace as I cut it into bite sized junks sorry I mean chunks. Once cut and placed in a dish I add a generous sprinkling of dried red chilli flakes and a splash of balsamic vinegar.

I then leave this to go mouldy in the fridge before chucking it away on the side for a few hours before eating it with a salad, fish or red meat dish.

To be really honest it is starting to grow on me!
